Spy Bar Presents: HONEYTRAP

A Decadent Night of Desserts, Cocktails, Music & Espionage-Inspired Indulgence

Spy Bar invites you to enter HONEYTRAP — a covert operation in pleasure, where exquisite desserts and masterfully crafted cocktails come together in a four-course tasting mission led by award-winning pastry chef Jared Bacheller.

With experience in Michelin-starred kitchens like Sixteen and Entente in Chicago and Boston’s legendary L’Espalier, Chef Bacheller’s desserts are precision-calibrated for intrigue—each bite blending French technique with unexpected flavors. Paired with expertly crafted cocktails, this experience is designed to seduce the senses while keeping you on your toes.

 

 

The Assignment:

Your first clue arrives in warm spiced apple cider, laced with milk foam and a dusting of nutmeg—a subtle prelude to what lies ahead. Then, the mission intensifies:

Rye Pretzel

Soft, butter-brushed, served with pastrami-spiced butter and house pickles. Paired with a rye whiskey cocktail infused with caraway and honey—a sip straight out of a Cold War rendezvous.

Faux Oyster

Lychee, grapefruit lillet blanc granite, and grapefruit shrub foam, mimicking a classic mignonette. Paired with a crisp gin cocktail kissed with citrus and a saline twist—a drink made for a spy with refined tastes.

 

Squash Crème Brûlée

Caramelized winter squash, chamoy sauce, sheep yogurt ice cream, and aged balsamic meringue. Paired with a smoky mezcal elixir featuring tamarind and maple.

Peanut Butter Cup Dish

Tres leches cake infused with house orgeat, topped with sunchoke chips and black pepper. Paired with a deep amaro cocktail layered with cacao, espresso, and warming spice—a perfect balance of decadence and intrigue.

Bergamot-Pine Ice Cream Pop – Served on a bed of pine, unveiling a mystifying bergamot mist over dry ice, branded with the Spy Bar insignia—a final mark of secrecy. Paired with an alpine amaro cocktail, blending herbal depth with a citrus twist—the ultimate disappearing act.

A cinematic mix of jazz, deep grooves, and hypnotic beats, setting the perfect tone for a night of intrigue. Prefer to mix it up?  An à la carte menu will also be available.
